The Texas Hill Country Olive Company is a family-owned business located in Dripping Springs, TX committed to supplying the highest quality olive oil produced in the United States. Our certified organic olive orchard features a Tuscan-inspired mill house, a state-of-the-art Italian olive press and a large tasting room. We are proud to join the pioneering group of entrepreneurs building the olive oil industry in Texas.

We sell four different types of Extra Virgin Olive Oil as well as traditional and fruit-infused balsamic vinegar. Buy the products individually or mix and match several products in a wooden gift box. Olive tree adoption is available and allows you to customize your labels to enjoy your private brand of olive oil all year long! Looking for an amazing place to have an event? Let us do the work. We offer complete event planning for any occasion.

We also have a wine bar with over 37 wines for you try. The best part is that every weekend we change out some of the wines so that you can try wines from all over Texas.   • This place has really expanded in the years since we were last there. It is very convenient and easy to find on Fitzhugh near Bell Springs. They have a couple of tasting stations where they encourage you to taste as many flavors of olive oil and balsamic vinegar as you would like - either straight or with bread. They also have a dining area where you can enjoy a meal or snack. We liked the Basil Olive Oil the best and bought a bottle. Our favorite balsamic vinegar was the fig.
  • Love trying their different olive oils, and come here each time I am headed to the Hill Country. Got the Jalapeno this time and can't wait to cook with it. We also ate lunch at their cafe. The caprese salad and roasted pepper soup were excellent, and made for a great start on our wine adventure. Also, try the Italian Herb mix with olive oil, especially with the bread they serve with the meal!
  • Fantastic place! Definitely take the time to go on the tour because you have the opportunity to learn so much! All staff was very friendly and helpful during our visit. The olive oils and balsamic vinegars taste amazing! They have 2 stations set up for tasting in their cute little shop with at least 20 different samples to taste. There is a distinct difference between their olive oil and what I have been buying at the store for years. If you have the opportunity to stay for lunch, get their early or reserve yourself a spot (if you are going on the tour first). The food is delicious and people come from all around to eat lunch there.
  • Wish I could give it 4.5 stars. The oils and vinegars were all wonderful. Also I learned so much from the tour on this beautiful property. The only negative was the gentleman who started the tour didn't stop trying to sell. I get it, they have to sell product. But dang I wish we got a break from the sales pitches for olive oil. If I didn't love olive oil already I wouldn't have driven an hour out of my way to take a tour of this place. Sherry, the second guide, was delightful.
  • Great selection of quality olive oil. Check out the recipe cards for ideas of different infused oils. Cant wait to taste the cranberry white chocolate cookies made with blood orange infused evoo. Friendly knowledgeable staff.
