  • This is all about one of the oldest cheese in Italy ... Bitto and the attempt to preserve the traditional process in the high pastures of the pre-alps. Preserve it for its history and to keep the moun...  more »
  • For a foodie what's nicer than enjoy all this, I don't love the Bitto too seasoned but I must say that they are "super" casera and Bitto

  • intrigued by the fame of the Bal we passed in the House of the bitto ... beautiful underlying the Museum shop ... After an explanation about the history of this cheese and how is done we got married in the restaurant where we could taste ... a wonder for the palate ... We also tasted the porridge with superb bitto ... I recommend everyone to go visit this place ... just to be able to keep alive a tradition of many years ...

  • Not just a museum. Not just a tasting room. Not just a store. Here is passed down the story of a historic cheese, whose roots are hundreds of years old. Here a dozen producers rebels continues to bring their forms obtained rimanedo faithful to traditional methods (no to supplements in animal feed, no additives, no preservatives, no to selected yeasts). Here, is the home of the Bitto of origins, the rebel. I was extremely impressed by the passion and courage with which Paul Ciapparelli (the owner) and his team are carrying on the tradition of this cheese, otherwise destined to get lost: a reality whose history deserves to be made known much more than it already is!

  • A place where the sale is second while there cares more to communicate the history and significance of a unique product: the historic cheese rebel and the extraordinary experience of his heroic defense. Great selection of wines. Quality beers. Simple food but always of artisanal cheese makers and environmental-linked. The maturing cellar is the piece de resistance: a living museum where memory and present intertwine like a few other sites. A show the Gallery of shapes in dedication: as ex-votos of a shrine.

  • It's the only place where you will find the true Bitto, one made with milk from cows, which eat only grass. The new regulations, approved by the Ministry, is to add flour and milk. Bitto produced here is out of this new rule, in favour of great quality. Information and read the story. Following this, it calls Rebel Historian!!
