Roquefort Cheese Caves, Occitanie

(3.8/5 based on 70 reviews on the web)
Roquefort Cheese Caves offers you a chance to see where the famous Roquefort blue cheese is made and stored. This type of sheep milk-based blue cheese is aged in natural Combalou caves, which play an important part in the process and the result. The soil here produces the mold that gives Roquefort its distinctly crumbly, slightly moist, and tangy characteristics. The underground caverns have been supplemented with stairs, columns, and arches to give support and accessibility. • You arrive at the village of Roquefort in from the highway, you find tourist slightly to left hand on a small square. Park your car, 500 m further you are 250 caves. Two main: company that everyone knows, rather industrial and artisanal butterfly. We'll let Roquefort company for once and we focus on butterfly which is what I prefer. Hospitality is cold, it is dryly answered than ' it n ' there did not visit but that the store is open. We do a half turn, cross the road and enter the small Winery Gabriel Coulet (5 gold medals in the general competition agricultural Paris) in front. We are warmly received by two young women smiling and friendly. We carry out the visit of the cellar alone: a short film about 10 minutes explaining the origin of the cellar, the metamorphosis of Roquefort, the fleurines (natural flaws) that guarantee a constant temperature and humidity development of penicillium roqueforti. Then a hearty tasting allows you to choose your Roquefort in feeling the flavors and looking at the duration of ripening that determine the power of the Roquefort. You will pass a good time combining the Roquefort manufacturing technique and tasting. Of course, there is a store selling.

  • We were able to visit the cellars very well commented .This ballad in the rocks was very instructive for us despite our knees problems we could follow it without difficulties because there are lots of stairs before coming to the Grail: tasting

  • One of the cellars which can be visited again with a good guide that explains very well. Tasting at the end of visit. Only regret I had visited this Winery 15 years ago and the animations before visit were exceptional, but no longer exist. We always explains the utility of the fleurines and penicillium roqueforti!. With the caption on the Shepherd and the Shepherdess who were part a few days frolicking in leaving their slices of bread covered caves of volume of goat that ended their returns transformed into roquefort!...
