Roquefort Cheese Caves offers you a chance to see where the famous Roquefort blue cheese is made and stored. This type of sheep milk-based blue cheese is aged in natural Combalou caves, which play an important part in the process and the result. The soil here produces the mold that gives Roquefort its distinctly crumbly, slightly moist, and tangy characteristics. The underground caverns have been supplemented with stairs, columns, and arches to give support and accessibility.
